Two needles, one waxed thread, and a seam that outlives the bag around it.
Machine stitching is fast. Saddle-stitching is slow on purpose.
Each stitch is locked by two needles passing through the same hole from opposite sides. If one side eventually fails, the other still holds — something a lockstitch cannot claim.
On our bench that means roughly forty minutes more per bag. We keep doing it because a seam that lasts fourteen years is cheaper than one that needs replacing in three.
